A course designed to be the continuation of basic French pastry utilising the newest techniques in the industry. Based on mousse cake but also many different types of filling, inserts, glazings using the best quality product in the market with the latest pastry equipments and molds. The program of this class changes very often so students can learn many different cakes without repeating.
